Tasty Banana Bread with Pecans

This banana bread is the ultimate comfort food. I think it’s best when eaten warm with butter but it’s also good on the go. It’s rich and moist with the perfect blend of sweet and slightly tangy.

Banana Bread with Pecans

Ingredients
  

Dry Ingredients
  • c flour sprinkle into measuring cup so not compacted
  • 1 tsp baking soda
  • 1 c pecans chopped
  • 1 tsp cinnamon
  • ½ tsp nutmeg
Wet Ingredients
  • ½ c butter melted
  • ¼ c yogurt or sour cream full fat
  • ¼ c sugar
  • ¾ c brown sugar firmly packed
  • 2 xl eggs – room temperature beaten with chalaza removed
  • c bananas – ripe & mashed
  • 1 tbsp vanilla

Method
 

  1. Preheat oven to 350 degrees & butter loaf pan.
  2. Add dry ingredients in a medium glass bowl, mix well.
  3. Mix wet ingredients in a large glass bowl.
  4. Slowly add dry ingredients to wet mixture and fold together until all moist.
  5. Pour batter into buttered loaf pan and bake about 1 hour (toothpick inserted in center will be clean).
  6. Allow to cool before slicing.
